The Western Jewel

This is the second largest city in Mexico and Guadalajara history has been important to Mexico for centuries. This precious jewel is the capital of the state of Jalisco, and a very beautiful city despite its tremendous size. Boasting a population of 3,579,174, this Mexican city still manages to keep its old world charm. Sitting on a highland plateau of 5,200 feet, this area enjoys warm, languid, sunny days and cool nights.

The climate is spring like the entire year round and probably one of the reasons it carries the nick name “La Perla de Occidente,” (The western pearl).

Although this is one of the most modern and prosperous cities in the country, Guadalajara history from the days of the Spanish conquest still shine through, especially in the historical downtown area. This area of the city is full of elegant old monuments, structures, and homes that bring character and elegance to the city. Part of the charm lies in the horse drawn carriages, beautiful green flowering gardens, and pedestrianized streets.

The state of Jalisco Mexico is to Tequila what France is to champagne and cognac. Wine and liquor connoisseurs, around the world, have elevated the appreciation and respect of distilled agave to that of vintage wines. And, like champagne, Tequila must be authenticated. Product testing and acceptance must meet a strict set of criteria established by the “Consejo Regulador” (Regulation Counsel/Board) . This is a not for profit association of Agave distillers, united in their effort to protect product quality and the name Tequila. The “Consejo Regulador” is like the bar association for lawyers; your right to license is always subject to review.
